Ginger-simmered squid & daikon

Tender daikon in a ginger-soy broth, made for a bowl of rice.

Method

  1. Peel daikon and cut into 1.5cm half-moons. Thinly slice ginger and cut squid into bite-size pieces.
  2. Simmer daikon in the water, partly covered, for 15–20 minutes until easily pierced. Add water if needed.
  3. Add ginger, soy, mirin, sugar and squid. Bring to a simmer and cook thoroughly over medium-low heat.
  4. Turn off the heat and rest for about 5 minutes to let the flavors settle.

TipSoften the daikon first so you do not need to simmer the squid for the entire cooking time.
